Chicken parmigiana is one of those dishes that everyone seems to make at one point or another. It's almost as if you don't know how to cook chicken parmigiana, you can't call yourself a cook. For some reason, I didn't get to it until now. I think it's because I have an abundant supply of cheese in my fridge that I have yet to find recipes for that got me thinking about cooking chicken parmigiana.
The recipe is fairly simple, but I did change one thing to quicken the cooking time (I was very hungry... studying makes your stomach yearn for food, who knew?). Instead of baking the chicken in the oven after breading it, I put some olive oil in the pan and browned both sides. Then I followed the recipe and put the chicken in a bowl with the tomato sauce. Needless to say, I put layers and layers of cheese on it... I love cheese! Especially melted mozzarella cheese!
I made some blue cheese garlic bread to go along with the pasta sauce. Again... way too much cheese lying around! I managed to use up all my blue cheese, yay!
Chicken Parmigiana Recipe

Makes 2 servings
Ingredients:
1 egg, beaten
2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.

4 ounces crumbled blue cheese
2 tablespoons grated Parmesan cheese
1 tablespoon snipped chives
1 teaspoon garlic powder
1 (1 pound) loaf unsliced French bread

Wrap loaf in a large piece of heavy -duty foil (about 28-in. x 18-in.). Fold foil around bread and seal tightly. Bake at 350 degrees F for 20 minutes or until heated through. Serve warm.
